Star Thistle Honey ~ The Star Thistle plant blooms in mid-summer, grows on the dry hills and along the road-sides of  Northern California. It is one of the most invasive weeds in the country.  It is considered to be a noxious weed.  Since it is invasive, environmentalists wish to eradicate Star Thistle which presently covers 22% of the State of California.  It is a danger to cattle and horses, killing them if they eat too much of it.  However, the bees love the nectar that this prickly plant produces.  So do we.  Star Thistle honey is one of our most popular honeys.  Even those who do not like honey like Star Thistle Honey.  It tastes like candy.  It will enhance any culinary application.  The bees that gathered this nectar were placed in a location where Star Thistle was the predominant bloom, but other wildflowers were present in nature’s mix.  Consequently, this take on Star thistle is sweet, golden in color, complex and candy-like with a star thistle back taste & wildflower honey overtones.
